Congratulations David. It sounds like you all are doing some great work. As far as the 501(c)3 stuff goes, don't be intimidated! Everyone talks about how long it takes and how much it costs, but it's really not all true! The paper work is LONG and confusing at times, but if you download it I'm sure you can fill out almost all of it on your own. If you know anyone who is a lawyer, perhaps you can sit down with them for an hour or two to go through the remaining questions and then send away! It takes a few months, but as you know having your 501(c)3 status is worth the efforts!
I hope to join a surf trip some day! We have a similar mission and approach at PEPY (www.pepyride.org) and I'm sure our organizations could learn a lot from each other.

Thanks for the words of encouragement, Daniela. We're well on our way; just last week (a fitting coincidence; Earthweek) our Certificate of Incorporation was approved!
We'd love to have you visit in Peru and join a surf trip. The longer you wait, the more options you'll have. ;) I'd totally love to bike with Pepy in Cambodia, too. In the mean time, I was happy to support Michelle Mulder's hula hoop fundraiser in NYC!
