I've been lucky hear about this project through the grapevine and would love to hear more! You provide little description of what a visitor may experience. Could you share with us what a typical visit would resemble? Thank you very much for your response!
These are some details on typical visit:
Usually you arrive to Almaty (former capital of Kazakhstan) airport and then you might decide on falconry courses in nearby location - about 100 km away, or if you are experienced hunter proceed to the main location in Karaganda (900 km north).
Then you commute to the hunters lodge in pretty good conditions and stay there for 3-6 days. Group optimally do not exceed 5-6 persons. Best season would be from 1st September till 20th February.
You are provided with most of the equipment: huntsman, horses, birds of prey(golden eagle, falcon, hawk), hounds, guns.
Typical hunting packages are:
a) with golden eagle for: fox, wolf, hare
b) with hawk for: blackcock, partridge, duck
c) with hounds for: fox, wolf, hare, badger
d) with guns for: hare, blackcock, partridge, fox, wolf, badger
Food: You are served with breakfast, lunch, dinner, supper (European and Kazakh choice of eco-friendly products).
It is mostly worth of mouth and personal references.
Based on steady flow of tourists last decade, it is surviving without outside intervention. Besides, there's government policy to support tourism oriented industries. Also it is interesting to see that birds of prey hunting is coming through many centuries.

One of the days you have evening near camp-fire.
How do you distribute and communicate your product? I am thinking, can this survive long term without outside intervention?
