Meat production at current levels is not sustainable. There is a distinct lack of restaurant options for vegetarians/vegans and opening a chain for that purpose would have a huge market now, and these restaurants would also avoid packaging, and aim to be wholly enviromentally friendly. I am passionate about this cause because in the UK and elsewhere it's a glaring option to help us think about how the food we consume affects the planet.

Overconsumption of meat (production of carbon dioxide, use of grains etc leaving some without enough food)
Getting rid of unneccesary packaging

use of plastic containers for takeaway foods, returnable for deposit
encourage vegetarian meals through the prominent display of veggie food restaurants

Use of plastic food/drink containers for takeaway food will leave less litter on the streets and encourage personal responsibility through use of deposit. Indoor meals won't use wasteful paper and cardboard.

Eating well is becoming increasingly popular, as is a vegetarian diet so other chains will/ have opened.

Need funding to get up and running! but found a lot of interest in environmental food issues.

Financial- people will always want to eat nice things! great food will gain returning customers.
social - more people than ever are interested in a meat-free/vegan diet
enviromental- no meat reduces impact of having fed the animals (CO2 emissions)

Entrepreneurship allows people in developing countries to bypass a lack of gainful employment and/or poor wages or working conditions and gain more control over their lives.
What aspects of your stay in Uganda as part of the competition do you think you will find most challenging and rewarding?
Being away from home and the sheer differences between Uganda and the UK will be very challenging. It will be most rewarding to experience more of the world and learn.
