This sounds like a really neat idea! Would you mind providing more of a description on rice polishing, and how this adds to the nutritious value of rice? Sounds very interesting!

It seems probable that the essential factor lacking in the diet of polished rice is the vitamin removed in the process of polishing. Polished rice is deficient in fat-soluble A, and water-soluble B, the accessory food substances necessary for normal growth and maintenance of life. The fats of rice contain very little, if any fat soluble A, while all the water-soluble B is carried in rice polishing.

Hello--your idea sounds like it has good potential to make a large impact on the nutritional status of rice eaters globally. I'd like to know a few more details about your project--entries that are most complete in information are usually the strongest. Not being an agricultural expert, I'm not exactly clear what rice polishing is. Would you be able to describe the process? You mentioned that during this process Vitamins A and B are removed from the rice. Is your goal then to develop a process whereby these vitamins remain in the food or would you like to increase particular vitamins or minerals that are not naturally found in the rice currently grown in India? This project seems to require partnerships across sectors. How are you convincing agriculturalists to participate in your project? Who funds the project? Are the funds promised for a certain amount of time or will you have to do some fundraising? If so, how would you go about doing that? You also mention that impact is not yet assessed. When it comes time to measuring impact, how will you approach this? Is there an education component to your project?
